Thai red curry egg

Thai red curry egg

Everyone likes red curry isn’t it? why not make a Thai red curry with egg?

below ingredients are for my palate, please feel free to eliminate or add to get the taste you like !

Servings : 3

Cook and prep time : 30 min

INGREDIENTS

  • 6 eggs boiled and cut in half

  • 2 cups of coconut milk ( less if you like thicker more if you like thinner

    You can also add 1 cup thick coconut milk and 1 cup low fat coconut milk if you are watching your calories. But remember this is 3 servings ! and this will get divided by 3 people !

  • 1-2 lemon grass stick ( large one) crushed

  • 5-6 garlic cloves crushed

  • 1/2 thumb sized piece of ginger crushed

  • 1 tbsp of soy sauce

  • 5 or more red thai chillies( bird eye)

  • 1 onion sliced

  • salt and pepper

  • 1 tbsp chilli flakes

  • 1/2 tbsp lime juice

  • 1/2 tbsp of curry powder

  • 1 lime leaf if you have

  • Olive oil spray

METHOD

Spray the skillet with few olive oil sprays and once its heated add onions and garlic; saute for few mins Now add crushed lemongrass, ginger and the Thai chillies, curry powder and chilli flakes; sautee for further 5 min until everything is soft! You will get a fantastic aroma at this point. Add coconut milk, salt, pepper, lime leaf and bring the whole thing to a boil! Add soy sauce and the lime juice and mix to combine; Taste test. If you want more lemongrass, you can add crushed lemongrass and heat up the mixture for one min. Now gently add the cut and boiled eggs and mix it without breaking the eggs.
