 Mild Cucumber curry

Mild Cucumber curry

Ayubowan yet again my friends, I'm here with yet another easy recipe! This time I am using cucumber! Alternatively, you can use marrow as well.

Serving size : 3

Cook and prep time : 20-25 min

INGREDIENTS

  • 5 large cucumbers peeled and cut into cubes

  • 2 green chillies

  • 1/5 cup of coconut milk

  • Bunch of curry leaves

  • 1/2 tsp of turmeric powder

  • 1/2 tsp fenugreek seeds

  • 1 yellow onion sliced

  • 1/2 tsp curry powder ( optional)

  • Sea salt to taste


Mild curry

METHOD

  1. Simply put everything in a large pot and cover until cucumber is cooked.

  2. Taste test and add more curry powder or salt

Simple as that ! this does not take much time at all but trust me you will enjoy this mellow vegan curry so much. I love to have this with a bit of bulgar wheat on the side.
