Barley biriyani healthy

Does anyone have some barley on hand? or quinoa? try this recipe if you like! If you don’t like barley, you can make the same recipe using white rice or brown rice.

Serving size: 2

Prep and cook time : 40 min

INGREDIENTS

  • Barley cooked 1 cup

  • 1 Onion chopped

  • 1 Tomato chopped

  • 1 cup green peas

  • 1 cup chopped carrots

  • 1 bay leaf

  • Few curry leaves

  • 1 tbsp yogurt

  • 3-4 cardamom pods

  • 2 cloves

  • 1 tsp cumin seeds

  • Turmeric 1/2 tsp

  • Biriyani Masala 1 tbsp ( I make my own and you can get the recipe here)

  • 2 tsp chili flakes

  • 3-4 garlic cloves crushed

  • 1/2 tbsp crushed ginger

  • Salt to taste

  • Few sprays of oil

  • Coriander and mint leaves ( a handful of each)

METHOD

  1. Soak barley overnight and cook with about 2.5 cups of water; drain water and set aside.

  2. In a skillet add few olive oil sprays and heat up; add ginger, garlic, curry leaves, onions, and bay leaf. Sautee for 1 min; add the seasonings and saute until onions turn light brown.

  3. Add tomatoes, carrots and the peas; cover and cook until carrots are tender.

  4. Add yogurt and keep sauteeing for a few mins until you see the mixture is dark in color and everything is thoroughly cooked.

  5. Add the mint and coriander leaves if you have them in hand.

  6. Now add cooked barley and mix well do combine. Enjoy!
