Coconut Brussels sprouts curry

Coconut Brussels sprouts curry

Prep time : 5 min

Cooking : 20-25 min

Serving size : 3 people

INGREDIENTS

  • 250g Brussels sprouts cut in half

  • 1 large onion sliced

  • 2-3 green chillies

  • 1/2 cup coconut milk

  • 1/2 cup water

  • 1/2 tsp turmeric powder

  • 2 tsp curry powder

  • 1 tbsp chilli flakes

  • 1 tsp fenugreek seeds

  • Handful of karapincha or curry leaves

  • Pinch of salt

  • Bit of lime juice ( optional)

METHOD

  • In a clay pot add everything except coconut milk and cook the Brussels sprouts.

  • Once the Brussels sprouts are tender, add in the coconut milk and bring it to a boil !

Thats it !

Enjoy with a side of brown rice.
