Stuffed Spicy peppers

Stuffed Spicy peppers

If you want a low-carb snack which will keep you satiated for a long time; this is definitely the snack for you !

This can be made as a vegan snack or a non-vegan snack as I did here. If you want it to be fully vegan, just substitute chicken mince with tofu mince or Quorn mince.

Servings : 10 half stuffed peppers

Prep time : 10 Min

Cook time : 25 Min

INGREDIENTS

  • 5 red sweet peppers de-seeded and halved

  • 1 onion minced

  • 4 minced garlic cloves

  • 2 green chillies

  • 1 cup with minced chicken

  • 1 cup minced carrots

  • 1 tbsp light soy sauce

  • 1/2 tbsp honey

  • 2 tbsp chilli flakes

  • 1/3 cup low fat shredded cheese (optional)

  • Few sprays of olive oil

  • 1 cup chopped spinach

METHOD


Pre-heat oven to 180c

  • In a skillet, add few sprays of olive oil. Once heated, add minced onion,garlic, ginger, carrots and green chillies.

  • Once the onions have changed colour and carrots are a bit soft, add in the chicken mince and the chilli flakes; keep sautΓ©ing until chicken changes colour.

  • Add honey and soy sauce, seasonings of choice ( salt and pepper) and keep sautΓ©ing until the chicken is fully cooked.

  • Add the chopped spinach to the mixture and mix well.

  • Now, take the halved peppers and stuff them generously .

  • Add cheese on top and bake the peppers for about 10 min until cheese melts.
