Easy biriyani mix

Easy biriyani mix

If you want a quick and easy biriyani spice mix, this is the one I usually make. I make this recipe in a small batch and keep it in an air-tight container for later use. This may be not the very traditional recipe but this works well for me taste-wise.

Serving size : probably 3 uses ( depends on how much you put in your biriyani)

Prep and cook time : 10 min

INGREDIENTS

  • 3 tbsp of chilli powder

  • 3 tbsp coriander seeds

  • 1 tbsp cumin seeds

  • 3 sticks of cinnamon

  • 1 tsp cloves

  • 2 star anis

  • 1/2 tbsp black peppercorns

  • 1/2 tbsp cardamom seeds

  • 1 tsp fennel seeds

  • 1/2 tsp turmeric

  • 1/2 tsp nutmeg

  • Few bay leaves

  • few curry leaves

METHOD

  1. Apart from the nutmeg and the turmeric, add everything else to a DRY skillet and dry roast everything while stirring frequently. This should take about 2 min; there will be a beautiful aroma coming right about now.

  2. Let everything cool down and transfer everything to a high-speed blender add turmeric and nutmeg; blend until you get a coarse masala type texture.

  3. Put the mixture in an air-tight container and use it as and when needed.
