Simple refreshing, tabbouleh.. I am honestly addicted to this salad. Every-time I eat this, I feel healthy and energetic and the mint in the salad definitely reduces my sugar cravings!

Serving sIze : 1

Prep time : 5 min

INGREDIENTS

  • 2 cups of finely chopped parsley

  • 1 cup of finely chopped mint

  • 1/2 onion finely chopped

  • 1 tomato finely chopped

  • 1/2 cup freshly grated coconut

  • 1/2 cup cooked couscous

  • Juice of 1/2 lime

  • Pinch of salt

METHOD

  1. In a medium size bowl, add all ingredients except the lime juice. Toss well.

  2. Add lemon juice just before you serve, otherwise it may get soggy.
