Spicy curry dip

Spicy curry dip

This curry sauce will go quite well with some chapati’s roti’s or even parathas!

Serving size: 2

Prep and cook time : 15-20 min

INGREDIENTS

  • 2 large onion finely chopped

  • 2 garlic cloves finely chopped

  • 2 green chillies finely chopped

  • 1/2 large tomato finely chopped

  • 3 tsp of curry powder

  • 1 tbsp of chilli powder ( this may be too much for most of you, i like it extremely spicy hence i added this much. Please reduce if you need to)

  • 2 dried Red chillies ( optional)

  • 1 cinnamon stick

  • Few curry leaves

  • 1 cup of thick coconut milk

  • 1/2 cup of vegetable or chicken stock or a stock cube

  • salt

  • Few oil sprays

METHOD

  1. In a skillet, add few sprays of oil and heat up. Add finely chopped onions and garlic; Sautee for 1 min.

  2. Add curry leaves, curry powder, green chillies, tomatoes and keep sauteeing until everything changes colour.

  3. Add chilli powder and saute for 30 seconds; Pour the vegetable or chicken stock; cover with a lid and let the mixture cook for 5 min.

  4. Take the lid off and add coconut milk and salt; Let the mixture boil. Taste test; add more seasonings if needed.
