Cream of mushroom soup
In my life, I have only come across two people who does not like mushrooms! so safe to say majority of the people will like this recipe !
I love cream of mushroom soup! however, it has loads and loads of butter and cream! My recipe uses very few ingredients and so much healthier than the version we get in cans or order at a restaurant !
This can be made absolutely vegan by substituting the semi-skim milk to coconut milk and chicken stock to vegetable stock.
Prep time: 5 min
Cook time: 15-20min
3 cups of sliced mushrooms
4 minced garlic cloves
1 tsp dried thyme
Salt to taste
2 tsp of pepper
1 cup of chicken stock ( or vegetable stock if vegan)
1 cup of semi skim milk plus 2 tbsp coconut cream or 1 cup of thick coconut milk plus 2 heaping tbsp of coconut cream ( if vegan)
In a pot add all the ingredients, cover and cook until the mushrooms are soft.
Taste test and see if you need more salt or pepper.
Take half of the mushroom soup and blend with the 2 tbsp of coconut cream.
Mix with the rest of the mushroom soup and boil the mixture !
