Healthy dhal curry also known as parippu
Parippu also known as dhal curry is a staple in Sri Lanka, we do something called “themparadu” which means, sautéing with oil. INGREDIENTS
2 cups of red lentils
4.5 cups of water
Handful of curry leaves
1 tsp mustard seeds
1 chopped onion
2 chopped chillies
Salt to taste
1 tsp of curry powder
2 cups of pure coconut mik
1-2 tbsp of chilli flakes
1 tsp turmeric powder
METHOD
In a clay pot or a pan, add everything except coconut milk and salt, cover the pan and cook until lentils are cooked.
Add the coconut milk and bring it to a boil, add salt to taste !
